Tropical Sunrise Lollies

A delicious and arthritis-friendly recipe for fruity ice lollies. Accidentally vegan, these iced treats are packed with antioxidants and healthy vitamins.

Ingredients:
150g mango chunks
100g pineapple chunks
150ml coconut milk
50g defrosted frozen cherries (or from a tin)
* 2 Tbsp honey (optional; substitute with agave syrup for vegan diets)

Recipe: Using a hand blender, blend together the mango, pineapple and coconut milk in a jug. Taste and if too tart, add the honey and blend again. Pour this mixture about two-thirds of the way up each lolly case. Add the cherries to the leftover mixture and blend again. Carefully pour this mixture into the lolly case too. Freeze for 5 hours and enjoy!
