Pumpkin Seed Quick Bread SERVES: 4 Ingredients: 1 medium egg 100g strong white flour 100g wholemeal flour 50g rolled oats 50gs pumpkin seeds 1tsp baking powder 1/2 tsp salt 75ml natural yoghurt 75ml semi-skimmed milk Recipe Summary A delicious versatile and easy to make bread, to accompany sandwiches or soups! Method: Combine all the dry ingredients in a large bowl. In a jug, beat together the yoghurt, milk and egg. Make a well in the middle of the dry ingredients and then gradually pour in the wet ingredients from the jug. Mix everything until the dough just comes together. Dust the dough with flour and shape into a rough round. Slice a cross on the top with a sharp knife to help the bread rise easily and bake at 180C/375F for 35-40 minutes or until well-risen, firm and golden. Allow to cool on a rack for 20 minutes before serving.
